  • crusted: (of port, and other wine) has deposited a sediment (called 'crust') as a result of the intentional in-bottle fermentation process (requiring it to be decanted before serving). A “crusted” cork is ideal for port, which is not considered at its peak until the fermentation has produced a crust. Sniffing the cork was once a sign of sophistication.
